Yumbo Lemoncello is a full-bodied, whiskey-based lemon liqueur made in collaboration with local lemonade pioneers, Yumbo Soda Co.
A riff on traditional limoncello with a local Victorian twist, Yumbo Lemoncello steeps hand-peeled lemon zest, sourced as a by-product of Yumbo’s lemonade, in our Solera Rye until the oils are released. The citrus notes of the lemon peel blend seamlessly with the cinnamon spice of the rye, creating a unique lemon liqueur with a strong lemon, zesty flavour and a spicy rye kick.
Yumbo Lemoncello was blended with the intention of being sipped as a digestivo with friends at the end of a hearty meal, or consumed on hot summer days as a refreshing spritz, making it perfect all-year round.

The partnership was formed on our shared dedication to quality and flavour, making products from locally sourced ingredients, and a mutual passion to remain hands on without taking shortcuts – us persisting with the notoriously difficult 100% unmalted rye grain for our whiskey and Yumbo painstakingly hand-peeling every one of the lemons for their lemonade. Collaborating as local producers is part of the connection both brands have with the Victorian community.
What is The Dispensary?
The Dispensary is a series of in-house flavour experiments, crafted by our distilling team for themselves and their weekend cocktails. The series is complementary to or built from our 100% Australian Rye Whiskey. Yumbo Lemoncello is the fourth release under The Dispensary.
